Although apples as we know them today are not indigenous to the Americas, they are now such an integral part of our culture that we think of ourselves as “American as apple pie.” In my childhood in rural Illinois, I was first introduced to apples when I discovered a bushel of apples in my grandmother’s cellar. As a young adult, I let my future husband know how I felt about him by putting an apple in his mouth! When I prepared a home cooked meal for my new in-laws, I made my first apple pie!
Apple Cider Vinegar Tonic:
- 1 to 2 teaspoons of ACV
- 1 glass of water (8 oz)
- drink before or during meals 3 times a day
German Potato Salad
This traditional favorite comes from an old Mennonite recipe: (8 servings)
4 pounds potatoes (about 8 cups sliced)
3 cups chopped onion
2 tablespoons sweetener of your choice
sale and pepper, to taste
1/4 cup vegetarian bacon bits
3/4 cup hot water
3/4 cup apple cider vinegar
Boil the potatoes until tender. Peel and slice them while warm. Add the onions, sweetener, sale, and pepper. Soak the bacon bits in the hot water and vinegar until just starting to soften. Pour over the potatoes and onions, and toss lightly.
